An 8 × 4 ft plywood sheet, 12 mm thick. Twelve millimetre is the general-purpose thickness — strong enough for shelving, cabinet sides, partitions and ceiling work, and still easy to handle.
Plywood thickness is chosen by span and load, not by looks: the further it has to reach unsupported, the thicker it needs to be. A sheet that flexes under hand pressure will sag under a load within months.
Store sheets flat and off the floor. Standing plywood on edge against a wall in damp weather is how it ends up bowed before it is even used.
